The Ritual

Five grams. Fifty grams of water. Ninety seconds.

  1. 01
    Sift 5 grams of matcha into a warm bowl.
    A fine sieve removes every clump before water touches the leaf.
  2. 02
    Add 50 grams of water at 80°C.
    Never boiling — heat above 85°C turns the leaf bitter.
  3. 03
    Whisk in a W motion until a fine foam forms.
    Ninety seconds, wrist loose, never stirring in circles.
